Our daughter-in-law put on a "grazing" birthday lunch for our son today. The fruit included lychees, dragon-fruit, pineapple, rambutan, papaya etc. Then there were satay sticks, sushi, various steamed Chinese buns etc. Finished off with profiteroles, Indonesian Kek Lapis, Taiwanese Pineapple cake, Green Tea cake and sweet potato doughnuts (made by her) - which were delicious. In fact, it was all delicious.

I made a Mississippi Pot Roast because it's easy* and I wanted to try it out. Here's one recipe:

    https://www.allrecipes.com/recipe/26...ppi-pot-roast/

First I seared the meat a bit, then put in the crock pot with the two packs of flavoring (as listed in the recipe above). I added 6 pepperoncinis and just a little juice (didn't want so much of that). After four hours or so, I put some baby carrots and quartered potatoes around the meat, then let it cook for about another three hours.

It was very easy, you just have to wait a bit. I liked the flavor enough to make it again, but I won't rave about it. There are a couple of things I think I'd tweak next time.

*My cooking skill is only slightly above the "can boil water safely" level, so I like easy. I am starting to experiment a bit more, though.

    Today's menu:
Large bowl of oatmeal with blackberry jam mixed in with a cup of coffee.
Lunch, subway have to get the gift cards anyway either the most expensive sandwich or the cheapest.
later probably a couple of hot dogs, they give us a break and sell hot dogs at the auction.
Plus taking some pistachos and a small box of chocolates to give to the customers and the people at the auction company and might have few myself.

Right now there are a couple of chicken breasts marinating in a combo soya, worcestershire, ginger, garlic, honey and some pickling juice from some hot peppers, probably make a stir fry out of that with some rice. Hey someone left to Christmas shop with the chicken breasts in the fridge.

Christmas breakfast was a savory bread pudding of ham, Andouille sausage, and onion; with fresh pear slices on the side.

Dinner was a beef roast of tenderloin with a port-lingonberry reduction, oven roasted Brussels sprouts with a balsamic glaze and dried cranberries, and potatoes au gratin with a leek and mushroom filling. Wine was a local red Christmas berry wine...a little sweeter than I usually care for with a meal but not bad all the same.

We had our Christmas dinner early so after eating we cleaned off the turkey carcass and proceeded immediately into making stock. Yesterday I made soup of some of that. Very good!
Can't hold a candle to Brett's meal, of course, but I still enjoyed it.

Some Chinese takeaway, decide to treat. Tomorrow probably oatmeal and beans. Last time the auction company was here the auctioneer said it was a while since he had homemade baked beans, so mom she would make a bunch next time they came down.

Chocolate chip oatmeal cookies, a recipe from the King Arthur Flour Company. Note to self; even though the recipe calls for 3 cups of chips....don’t.
