Was there ever a significant amount of nitrogen in Mars' atmosphere, and if so, what happened to it?

Yeah. Mars must have had a bunch of nitrogen. Where'd it go?

My bet would be it is still there in the form of nitrates.
The landers detected perchlorates powerful oxidising agents.
If the environment has lost enough hydrogen to space to make perchlorates stable, then I would guess most of the nitrogen is in oxidised forms.
