Making beer is an ancient art, and has been expanding via the craft beer entrepreneurs worldwide. One of the tricks in the art is germinating the barley, so that the starches convert to maltose, which is then cooked, and fermented with brewer's yeast to alcohol, and carbon dioxide. Typically, a brewmeister tests for the disappearance of the starch, to arrest the germination. These guys are using dark-field X-ray radiography which detects microcrsytalline changes in the barley grains to detect the final stages, in a preliminary experimental setup. Slick. pete
