On a quick search, this is the thing that he said closest to takeoff of the ascent stage from the Moon:

We're number one on the runway.

— Buzz Aldrin, 21 hours and 36 minutes after landing on the moon, his reply to Houston's "Our guidance recommendation is PGNCS and you are cleared for takeoff." The ascent stage rocket was then lit and Neil and Buzz left the moon.

I did not find anything on what he said after takeoff.

What did Buzz Aldrin say to Houston?

"Hello, Whitney! I've been a fan of yours since I was a kid!"

And she slugged him in the jaw, decking him.

Oh, wait-- you mean Houston, Texas. That's completely different.

The Apollo Lunar Surface Journal has annotated transcripts of
practically everything said between the astronauts on the Moon
and Mission Control in Houston.

The Apollo 11 transcript of the launch from the Moon is here:

124:20:05 Aldrin: Roger. Guidance steering in the AGS. (Long Pause)

124:20:58 Aldrin: Okay. Master Arm, On. (Long Pause)

124:21:33 Aldrin: DSKY blanks. (Pause) Got that Ascent Card? (Pause) Yeah.

124:21:54 Aldrin: 9, 8, 7, 6, 5, Abort Stage, Engine Arm, Ascent, Proceed.

[They launch at 124:22:00. Note that, now that they have launched,
the LM call sign is once again "Eagle"]

124:22:07 Aldrin: (Static) (Garbled) shadow. Beautiful.

124:22:09 Aldrin: 26, 36 feet per second up. (Garbled) for the pitchover.

124:22:14 Armstrong: Pitchover.

124:22:15 Aldrin: Very smooth. Balance couple, Off. (Pause)
(To Houston) Very quiet ride. (To himself) There's that one
crater down there. (Pause)
There is also a RealAudio clip of this, plus lots and lots of other stuff.

According to Chaikin's book, Aldrin said: "We're off. Look at that stuff go all over the place," as the LM ascent engine fired. Presumably that's somewhere amongst the garble and static in the transcript Jeff provides.
